Ok--we're going all the way back to the very beginning of the supply chain when we talk about The General's Pulled Pork.
Our pure-bred Berkshire hogs are carefully raised in the Pensacola, FL area, and are a premium breed of pig that originated in the English county of Berkshire.
Berkshire pork, prized for juiciness, flavor and tenderness, is pink-hued and heavily marbled. Its high fat content makes it suitable for long cooking, and also for high-temperature cooking.
Although we are sorely tempted to feed The General's Hot Sauce to the pigs to see if we can create the purest form of spicy pulled pork, we are discovering they would much rather just chow down on healthy leftover food from grocery store buffets and salad bars. It's all good--more sauce for us!
These hogs vary in size, so the price does too. But the average pricepoint is $1500 plus delivery. We also charge extra for hogs that have a sparkling sense of humor; we can negotiate on that one.
